Is it possible to adapt/update this recipe using breast fillets and an alternative to deep frying, that will have a similar flavor? In other words, a healthier version (even if it means compromising some of the authenticity)?

You can substitute chicken in a lot of recipes. Don't know what he was making, but could you use baked chicken instead? If I knew what he was cooking would help.

Since we don't know the recipe, it's hard to give you an answer. I never deep fry anything. You can usually bake in the over as A Brown says.
If you have the time to watch this short video It will give you some great ideas. This recipe pertains to the whole chicken. But you can use just breasts. It really tastes great and is healthier than deep frying.
It turns out crispy and juicy yet much healthier than fried.
