Can I still plant carrots, lettuce, spinach into raised garden beds. I'm in zone 7 too in NC. Will seeds germinate? Do they need cover? Thanks for all your help. Rickeylisa@aol.com

Hi Lisa!

Yes you can plant carrots, lettuce and spinach in raised beds provided your area is not so hot and waterlogged. These crops are cool loving plants, so they need a cold temperature but not too much frost.

To be safe, put up your greenhouse so that you can plant anytime of the year and you don't need to cover them anymore since it's safe from any unfavorable weather condition.

Hi Lisa, I am also in zone 7 (Memphis).  I plant lettuce, spinach, carrots, radishes, & brussel sprouts all winter.  Since you have a raised garden it makes it that much easier.  Plant your seeds, mulch with a 2 in layer of pine needles (free). I place a piece of plastic sheeting over my raised bed until the seeds germinate and then keep it rolled back unless it gets very cold (way below freezing)   All these plants like a bit of frost and the raised bed and pine needles hold in enough heat to keep the ground pliable.  Grow your garden all winter, no need for a greenhouse.
