I am looking for software or some way of deciphering internet header details that come with emails. Occasionally I would like to know if an email was sent from where the sender claims.

This articles give a really good breakdown of how to find email headers in various mail clients as well as what the different parts of each header mean. You can use the information contained in these two articles to get a pretty good idea of who is sending the email and where they are coming from.
