You say to squeeze the spinach dry after steaming.  Nothing about chopping it. If it's not chopped wouldn't it be long and stringy?

If you can, use baby spinach. It won't be stringy. If you need to use whole spinach leaf, I would definately chop it before cooking. Keep in mind that spinach wilts a LOT during cooking, a big volume of un cooked spinach will yield only a small amount so plan for that.
