As far as I know there is no diffrence: The original Grain colour ranges from pale white to ivory white and from very light tan to deep brown to reddish brown purple.  The seed colour gives the colour to the flour.  I am almost sure that the answer id correct but please check it (I don't want to mislead you).

There is a difference in the flavor also, the white teff has a chestnut flavor while the darker teff takes on an earthier flavor with a hint of hazelnut.

Purple Teff... hummm...grown in the ********* area, most sour of all teff..we love the sour...good yeast attachment from ground source.
