Can soy milk be easily substituted for regular milk in recipes for baking?

Definitely. I have a son that is lactose intolerant and I use soy milk as a subsitute all the time. You can barely if at all tell the difference.

No, No, No Soy milk does not do well in baking. It makes your bakery goods thick and gritty. You may be able to sub in a very few recipes, but I would not advise.
