Soy sauce cure chicken?

Does soy sauce "cure" things......I have chicken soaked in it, and thought I would be grilling it....now I can't tonight...how long will it last.  My husband swears that soy is like salt and will cure it.....????????

Victims of circumstance owe it to fate. Victims of choice owe it to themselves.

There is about one gram of sodium in a tbsp of soy sauce. This is certainly sufficient to curdle any self-respecting bacterium.

It should be fine for a week or so.

Dieticians and health gurus will become apoplectic at my advice and tell you to discard the chicken quickly. They are misguided. They do not speak from experience or common sense.

If you grill it after a couple of days, it may be tough. Wrap some bacon around it. (Before you grill it.)

You could probably leave it a day or two and it wouldn't matter too much. I would almost be tempted to tell you to rinse it and dry it to get some of the sauce off but you could wipe it good with paper towels and that would probably be alright. I like soy sauce because a little goes a long way in flavoring things. Happy eating.

soy sauce will not cure chicken.For that you would need to  make a brine using a nitrate such as Cure # 1.Hope this helps
