Was this ever a part of the Ice Age movies? I don't remember this, but I haven't watched either part in a long time.
If not, where was this included?
Scrat is the squirrel as you've noted. It started out as a sort of filler in Ice Age 1, but it became so popular they increased Scrat's role in the second part. This is a part of Ice Age 2, just before Scrat is resuscitated, when he almost dies and reaches acorns Heaven.
