Recipe for sponge omelet.

When I was younger, we lived in California for about a year. My mother got a cookbook from the library and used to make a dessert that was in it called sponge omelet. It is like a skinny 1 layer cake that you would put jelly or jam in the middle, then fold over like an omelet. You would then dust it with confectioner's sugar. It was absolutely delicious. However, she can no longer find the recipe, or remember the cookbook it was in. She is pretty sure it was from a cookbook with recipes from another country. If anyone could help, we would greatly appreciate it. Thank you.

The only thing I think it cold be is something I had while in Austria about 30 years ago. It was a meringue like concoction called a Pavlova.It wasn't real thin though. It was large enough to fill a small platter was fluffy, had a filling of I think currant jam and a heavy dusting of powdered sugar.The outer part of it was a very delicate crusty bit (like meringue cookies but not quite a crisp). It was delicious.Please find the recipe on line and let me know if it's what you were thinking of. Hope this helps.
