Poached egg shaped like a pear

There is a delighful Frenh country resturant in our town. On two occassons lately, I have had the most delicious salad and on top of the greens is a poached egg. The egg is shaped like a tear drop ( pear shape)  - it has a round bottom and then it comes to a bit of a point on top, like a stem. It is in the center of the greens and when one brakes into it - it adds the most awesome flavor to the salad. My question - how do they get the egg that way? It is not the usual shape of a poached egg. I would love a recipe for the salad and also info as to how to make the unusually shaped poached egg.

Eggs are poached by dropping a raw egg into a small metal container that is then put into the poacher. You would have to go to a specialized kitchenware store and ask for a pear-shaped or tear-shaped metal container.

You can achieve the pear shape by swirling the water before dropping the egg into your poaching liquid.  I recommend watching Chef Goron Ramsey on YouTube.  The video shows the perfect technique.  Be sure that your poaching liquid is simmering not boiling and it can be helpful to add vinegar to the liquid.  There are several poaching videos on YouTube, like "the perfect poached egg."  But the pear shape is achieved by swirling the poaching liquid.  It's tricky but fun to do.

You're welcome.  If the egg is fresh and you don't spin the water too fast, and you flip the egg in gently to follow the direction of the water (like Gordon does in the video), you can achieve a perfect ball.  But it's much more usual to get the pear shape.  Some people don't like this method because you tend to lose more of the white, but I find it a beautiful presentation for special dishes.
