How certain are you that your oven is the right temperature? Have you checked it using an oven thermometer?
Also, what type of pie plate are you using? If you use a glass pie plate, you must alter the baking temperature (which could affect your outcome).
Could this "raw" taste you describe be something only you are noticing? If so, perhaps there is a physical cause (for instance, some medications can cause some people to perceive tastes differently).
