I would think that as long as it is kept in a dark, cool place it would stay fresh for months. The problem would be that if you added baking powder or baking soda to the mix. If there is any moisture at all in the mix the leavening agent would lose its power. If you add any fat or oil it can go rancid unless it is kept in the refrigerator or freezer.
