need diabetic recipes, would like some casserole dishes...  :o)

As a woman who has an interest in cooking, I'll bet that you have some wonderful recipes that you are famous for.  With a diagnosis of diabetes, you don't have to throw out all your great recipes.  Remember that you want to keep your carb count under 19 per meal.  Reduce fat and sugar.  Modify your recipes so that they are primarily vegetables (about half), 1/4 whole grain pasta, brown rice, or potato, 1/4 lean meat, poultry or fish.   To make velvety cream sauces, use condensed skim milk and Butter Buds then add your seasoning.  Experiment with herbs and spices.  Add flavor with extracts.

Just in case you are looking for a new recipe, this is what I do with Acorn squash.  Cut in half and clean.  Add 2 tbls sugar free pancake syrup.  Cover with plastic wrap.  Microwave for 15 minutes or so.  It's delicious and easy.
