Appropriate bit for trail riding Tenesee Walker? And how to properly connect them to headstall?

I recently purchased an 11 yr. old Tenesee Walker Mare for trail riding.  She is a been there done that horse, who's past history was trail horse at riding camp, then most recently lesson horse.  My question or problem is this - the prev. owner sold me her "bits" - 1 basic snaffle, 2 "tenessee walker bit" and 3 long shank port bit.  She grabs the snaffle and pulls me along - the port she seems better with but I can't figure out how to hook up the walker bit as it has 3 connection areas.  I know the top goes to bridle, the bottom goes to reins, but the middle one where the mouth piece or bit is is for what?  I know I sound ignorant but I have ridden trail horses all my life with basic snaffles or hackamore - thanks
